Wednesday– what a tough day. You work like it’s Monday, but need a drink like it’s Friday! If you’re like us, then you’re in the mood for something that will keep your spirits up to get you to that special little place we call “the weekend” (some of you may have heard of this two-day phenomenon supposedly meant for something called sleeping in). This delicious + easy grapefruit honey paloma cocktail will have you feeling warm + lovely on these cold autumn nights, and the recipe yields enough to leave you a drink for Thursday morning before work… Kidding! Sorta. This is also a great alternative to a classic Mimosa if you’re looking to up your weekend brunch game. We originally saw this recipe on designlovefest, and tinkered with it just a little, ultimately deciding on this slightly altered recipe:
Grapefruit Honey Paloma
(yields 2 drinks)
• 1 cup (8oz) fresh ruby red grapefruit juice
• 2 tablespoons fresh lime juice
• 3 tablespoons honey
• 2 tablespoons water
• 3 ounces tequila
• club soda
Squeeze your grapefruit + lime for juice (don’t forget to strain). In a saucepan or microwave, combine three tablespoons honey with two tablespoons water to create a thinned honey syrup. Heat + stir until honey dissolves, and let cool to room temp. Combine honey syrup with grapefruit + lime juices, add in three ounces of your favorite tequila (mine’s Espolón Blanco). Pour over ice and top with club soda. Garnish with quartered grapefruit wheel.
