Ten Fresh Summertime (Mostly) Meatless Recipes We’re Dying to Try

The arrival of summer means the arrival of fresh produce OVERLOAD. Watermelon, zucchini, tomatoes, cherries, avocados, UGH I just. need. them. all! I literally ate an entire bag of grapes in one day recently. I may have a problem 🙁

Mad + I are just about mid-move. She’s been up here two weeks, staying in the Upper East Side; I’ve been here two days, staying in Brooklyn. We’re looking to snag a place for August 1st. This next month is going to be a mix of couch hopping, roof hopping, and bar hopping, and I couldn’t be more excited for the summer’s adventures! This nomad life means little space and time in a familiar kitchen, which has me daydreaming about having a housewarming dinner party once we get our own place.

Summer’s such a fun time to get creative in the kitchen with so many amazing fresh produce options. Here are the top ten plates I can’t stop dreaming and drooling over:

1. CHERRY, GOAT CHEESE, + ARUGULA PIZZA (via RecipeRunner)

Reasons we love it:

  • Sweet cherries with creamy goat cheese and arugula (my favorite green lately!),
  • Cook it outside, eat it outside! Perfect for a rooftop or patio dinner party.
  • Make a bunch as your entreĂ©s or a couple as flatbread-style apps!
  • Would be great with: Sangria!

2. ROASTED CHICKPEA GYRO (via Live Eat Learn)

Reasons we love it:

  • Perfect lunchbox item; protein packed chickpeas will get you through the rest of your workday
  • Recipe makes four gyros…. one each for our lunches today, and one each for lunches tomorrow!
  • fresh, cool, light, + flavorful
  • under 350 calories

 

3. WATERMELON + MINT SALAD (via Lisa’s Dinnertime Dish)

Reasons we love it:

  • quick + easy prep
  • salad or dessert? both? who knows?
  • delish poolside snack!

4. GRILLED SWORDFISH with MANGO SALSA (via Ala Lemon)

Reasons we love it:

  • A step up from Netflix + Chill; this spread looks super fancy, but is actually incredibly easy to whip up for a date night at home!
  • Light but filling meal, garnished with fresh summer fruits + veggies
  • While fish is sometimes a more pricey option at the market, this recipe is definitely more wallet-friendly than a seafood dinner for 2, and with no 40 minute wait for a table!

5. TOMATO + CUCUMBER QUINOA SALAD (via Little Spice Jar)

Reasons we love it:

  • amazing summer side dish
  • any leftovers will be great for lunch tomorrow
  • ummm… pomegranate molasses dressing? yes PLEASE!

 

6. BLUEBERRY AVOCADO SMOOTHIE (via Gimme Some Oven)

Reasons we love it:

  • Aptly named the Brain Power smoothie, this little drink packs a big punch to get your day off to the right start.
  • Blueberries, avocado, banana, chia seeds, pomegranate juice… oh yes. yes please.
  • gorgeous color
  • takes less than 5 minutes to make, perfect for when you’ve spent 5 minutes too long on your hair (or under your blankets).

 

7. SPICY PLANTAIN BLACK BEAN TACOS (via Minimalist Baker)

Reasons we love it:

  • I try to be an open-minded person, but if you don’t like plantains, then you’re wrong. Sorry.
  • Perfect party food, since prep time is low and ingredients are (relatively) cheap!
  • Best part about tacos? Easy clean up.
  • Pair ’em with: Mexican beer (my faves are Pacifico or Tecate)

8. AVOCADO CAPRESE SALAD (via foodiecrush)

Reasons we love it:

  • Can’t get enough caprese in my life. This salad is my go-to after a hot day of walking around or post-workout.
  • Arugula adds a great texture to it’s creamy comrades in this salad.
  • I like to add a little extra raspberry vinaigrette for some extra tart-zing.

9. MINT CHOCOLATE CHIP GREEK YOGURT POPS (via Country Cleaver)

Reasons we love it:

  • This option is the healthier alternative to ice cream, but just as delish!
  • After dropping these guys into the freezer to set, go do something and forget all about them. They will make your freakin day when you rediscover them, waiting for you!

10. MINT + COCONUT FRUIT PIZZA (via A Beautiful Mess)

Reasons we love it:

  • Sweet treats like this are always a huge hit at backyard barbeques and outdoor parties.
  • This one’s got strawberry, pineapple, + kiwi– but you could do any combination of fruits! There’s so much variety in summer fruit that it would be difficult for me to make just one kind.
